Burnt Flour Soup


I tell you the Swiss are a clever bunch. They invented recipes out of necessity that are delicious - Raclette to use up old cheese and Fondue to use up old bread and then there is this soup which is nothing more than burning a bit of flour!!!
Basel Flour Soup - Basel being my 'home' town.
Ingredients:
2 Tbs butter
4 Tbs flour
1.2 L Stock

Melt butter and add 2 Tbs flour and brown lightly, stirring constantly. Add remaining flour and remove from heat. Pour in stock and stir well. Simmer on low heat for 45 mins.

We like it served with cooked onion, grated cheese and crusty bread.

Simple.......and delicious.
